3 small cans of tomato soup

1 – 14 1/2 ounce can of stewed tomatoes

1 – 6 ounce can V-8 Juice

1 – 8 ounce cream cheese

1 teaspoon butter

1 small onion, diced

1 teaspoon garlic

1 teaspoon basil

1 pint Half and Half

Shredded mozzarella cheese


Heat tomato soup, stewed tomatoes, and V-8 Juice in a soup pan until hot. Do not boil. Add basil. Sauté onions and garlic with butter in a frying pan until the onion is clear. Add onions and garlic to the hot soup. Cut up cream cheese into small chunks. Add to the soup using a wire whisk. Whip until the chunks are in tiny pieces. Stir in Half and Half. Reduce heat. Cook for 10 minutes. Do not boil. Top with mozzarella cheese and croutons. Enjoy!!!
