Cupcake batter

1 1/2 cup flour

1 cup sugar

1/2 teaspoon salt

1 teaspoon baking soda

1/4 cup cocoa powder

1 cup water

1/3 cup vegetable oil

1 teaspoon vinegar

2 teaspoons vanilla extract

Mix dry ingredients together. Stir in vegetable oil, water, vinegar, and vanilla. Spoon into cupcake pan with baking cups until each is half full of batter. Set aside.

Filling

1 – 8 ounce cream cheese

1 egg

1/3 cup sugar

1/8 teaspoon salt

1 – 6 ounce package of chocolate chips

food coloring (optional – may add a few drops of green food coloring for Saint Patrick’s Day)

Mix cream cheese, egg, sugar, salt together. Add chocolate chips. Spoon heaping teaspoon of filling into half filled baking cups. Bake at 350 degrees for 30 minutes.
